- a medium roaster, about 14 × 10 in
- Sides
- 2 to 2½ in sides
- Rack
- a flat or V-rack
- Feeds about
- 8 people (1½ lb each)
- Rough roast time, unstuffed at 325°F
- 2.5–3 hours. Go by a thermometer: 165°F in the thickest part of the thigh.
Measure your oven and check the maker’s stated capacity; leave about 2 in of air on every side.
